Fully Loaded Nachos

Preheat oven to 200C.

Finely chop one onion and sauté with a splash of oil in a frying pan on medium heat. Once soft, add 2 tsp dried oregano, 1 tsp chilli powder, 1 tsp smoked paprika, 2 tsp ground cumin and 1 tsp mustard powder. Stir and cook for one minute, until smelling delish.

Throw in three cloves of garlic* (finely chopped) and 500g of beef mince. Let the mince brown on one side, before flipping like a giant patty then slowly breaking the meat up. Add 1 tbs oyster sauce, 3 tbs tomato paste and 1/2 cup of water (or chicken stock). Stir well and simmer on low heat for 5-10 mins.

In a large baking tray, dump half a packet of cheese CCs and half a packet of white corn chips. Toss to combine. Pour over the mince mixture and sprinkle with a cup of grated cheese. Cook in the oven for 15-20mins until cheese is melted and bubbly.

Remove from the oven and sprinkle with a tin of corn kernals (drained), two diced tomatoes, three spring onions finely sliced and a big handful of coriander leaves. Squeeze a juicy lime over the top with a flourish!

Serve with avocado, sour cream and (of course!) Spicy Green Sauce.

The thing I love about these nachos is that they’re colourful and packed full of flavour. It just feels fun!
